Red Beet Eggs are easy to make at home. This is a quick recipe to put together, but does require 24 hours of refrigeration. INGREDIENTS: 2 cans small sliced beets 1 cup cider vinegar 1/2 cup sugar 1 teaspoon salt 6 hard boiled eggs, peeled Place peeled eggs into a large container with a lid. Open the cans of beets and drain off the juice into a measuring cup. Add water to reserved liquid to measure one cup. Set aside. Put beets in container with the eggs. Set aside. In a saucepan combine beet juice/water, cider vinegar, sugar and salt. Bring to a boil. Remove from heat and pour over beets and eggs. Refrigerate 24 hours before serving.
