Raw tomato sauce is extremely flavorful, healthy and so easy to make! Use it to top pasta, spaghetti squash, polenta or “spiralized” summer or zucchini squash (raw pasta). First rinse the fresh, ripe, raw tomatoes and fresh basil with cool water and allow to dry. Chop the tomatoes into small chunks or use a food processor to chop more finely. Remember to leave the tomatoes a bit chunky. Next cut the garlic and use a garlic press to squeeze the juice into the tomatoes. If you don’t have a garlic press, finely-chopped garlic works as well. Or just crush the garlic and add while marinating then remove before serving. Now, julienne the basil and add to the raw tomato sauce base, the tomato and garlic mixture. You may add 1/2 tsp dried basil if fresh basil is not available. Stir in the olive oil. Sprinkle with sea salt and mix well. Cover the raw tomato sauce and allow to marinate at room temperature for 30 minutes or longer. This recipe makes approximately 5 servings.
