• Put 20 raspberries to one side. • In a medium saucepan, add the rest of the raspberries, sugar, and thyme sprigs. Cook over a low heat at a simmer, covered, for 3 minutes. The raspberries should turn into a mush. • Strain the raspberry mixture through a sieve into a bowl, pressing through with the back of a wooden spoon.
