How Do You Make Quick & Healthy Orange Glazed Salmon?
This healthy delight is very quick and easy to make and did I mention full over flavor as well?! The tender and flaky salmon mixed with a orange zesty sauce just burst in your mouth. This meal is accompaniment quite well with whole grain couscous or my favorite, jasmine rice. Preheat oven to 400 degrees farenheit. Lightly coat a baking dish with olive oil cooking spray and add 3 pieces of salmon. Drizzle each salmon with 1 tbsp white wine and each salmon with 1 tsp reduced-sodium soy sauce and bake for about 10 minutes. Lightly coat a small saucepan with olive oil cooking spray and heat over medium-high heat with 3/4 cup calcium fortified orange juice, 3 tsp orange zest, and 3 tsp cooking sherry. Stir frequently for about 5-8 minutes, until sauce thickens. Drizzle sauce over the cooked salmon and serve over jasmine rice or couscous. You can also top with a tbsp of chopped pecans. Yum!
