Making crunchy, yet moist salmon patties and creamy grits is easy if you know these simple tips my mother taught me. It is also a quick meal (less than 30 minutes from start to eating!) Start 2 2/3 cups of water on high. Add 1/2 tsp salt and a couple of shakes of the pepper shaker. Measure out 2/3 cup of quick cook grits and set aside. The water will heat to a boil as you mix ingredients for the slamon patties. Coat the bottom of a frying pan with vegetable oil and set on medium heat. Just cover the bottom with oil, don’t let it get too deep or you will have very greasy salmon patties. Allow the oil to warm up as you mix the ingredients. Open the slamon and drain all the water from the meat, then empty into a mixing bowl. Add 1 large egg. Add a generous tablespoon of dijon mustard (I really like dijon mustard flavor, so I add closer to 2). Take 1 sleeve of buttery crackers and crush them, then add to the bowl.
