Many of the recipes I’ve tried for making peanut butter brittle have been disasterous. I like simple and easy instructions that will give me great results! When I came upon this oh-so easy recipe I was thrilled. Not only do you get awesome peanut butter brittle that is super easy to make, you get peanut butter brittle that isn’t sticky or tacky! Enjoy! In a heavy sauce pan boil sugar, light corn syrup and water to 275 degrees on high heat. Heat your peanuts up in a slow oven to warm them nicely. Once your sugar and corn syrup is boiling at 275 degrees, reduce the temperature to medium heat and add margarine. Stir and add your warm peanuts. Stir until your mixture reaches 300 degrees and then remove from heat. Add your baking soda and stir for 30 seconds (exactly). Pour immediately and quickly onto a well-greased baking sheet. Pull with a butter knife until think and hard and then crack! Store your yummy peanut brittle in an air tight container.
