These are a great authentic Mexican snack that kids love. Serves six for a snack. Heat a cast-iron griddle or skillet over medium-high heat. Cut the lime in half and squeeze its juice over the avocado slices. Place a tortilla on the griddle and spread a layer of cheese evenly over it. Sprinkle a little salt on the avocado slices, and add a few of them on top of the cheese. Place a second tortilla directly on top of the first one. When the bottom tortilla is dark brown in spots and crispy, flip the quesadilla over to brown the other side. Repeat with the remaining tortillas. Cut the tortillas into wedges and serve topped with the salsa.
