Potatoes come in a variety of flavors and colors, but most people stick to basic Russet potatoes. Purple potatoes not only add a splash of color to your favorite potato dish, but they also make the most delicious mashed potatoes. They do have a bit more starch than regular potatoes, so be sure to store them properly and go easy on the salt. Recipe serves 2. Peel and rinse potatoes, and slice thickly. Slicing potatoes allows them to cook faster. Bring 5 cups of water to a boil in a medium pot. Add salt to water because this is the only time you really have to season the potatoes. Add potatoes to boiling water, cooking for about 5 minutes or until soft. Drain water from potatoes and place back in pot. Mash potatoes with a potato masher until there are no chunks remaining. Stir in butter and sour cream until smooth.
