How Do You Make Pumpkin Pie Quick Bread?
This is a very rich, moist quick bread that I make on the holidays for friends and family. The flavor is reminiscent of pumpkin pie and the added coconut makes it so moist. Preheat your oven to 350 degrees and grease and flour two 9 x 5 inch loaf pans. (You don’t have to limit yourself to loaf pans. Sometimes I make this bread in two deep dish pie plates and then cut it into wedges and serve with butter. It will cook faster in a pie plate as well. You can also make mini loaves and wrap them in cellophane and decorate with ribbons as gifts during the holidays.) In a mixing bowl, beat together the sugars, oil, and eggs. Stir in the pumpkin. Next add the flour, baking soda, and spices and then the water. Stir everything together just until moistened. Fold in the coconut and pour your batter into the prepared pans. Bake for 60 minutes, or until knife inserted in the center comes out clean.
