My grandma called this Hawaiian Pumpkin Pie. To me that sounded like there were pineapples involved which sounded uninviting. So I changed the name. This pie is very simple and delicious. It’s a layer of ice-cream with a layer of pumpkin on top all held in a graham cracker pie crust. This chilled pie is a Thanksgiving classic for even the hottest of evenings. It’s really nice with a cup of hot coffee. You can use bought or homemade crumb crust. To make your own crumb crust combine 1 ½ cup graham cracker crumbs, ¼ cup sugar and ¼ cup melted butter. Press into a 9 inch pie pan. Bake for 8 minutes at 375 degrees. Let it cool before starting the next step. Using slightly soften ice cream smooth a layer into the bottom of the pie crust. Put it into the freezer while you work on the next steps. In a medium bowl mix together the pumpkin, sugar, spices and salt. Fold in the whipped cream.
