How Do You Make Pumpkin Chocolate Chip Muffins?
This recipe for pumpkin chocolate chip muffins is my family’s adaptation on a pumpkin muffin recipe. We have tweaked the recipe to make it just right but adding some ingredients and deleting others. The yogurt in this recipe makes the muffins especially moist. With the holidays just around the corner, this is a timely recipe that will make a wonderful addition to any holiday meal. These pumpkin chocolate chip muffins are easy and, best of all, nutritious. Preheat oven to 350 degrees. Lightly oil muffin pan(s) to accommodate 12 muffins. Combine the flour, baking soda, baking powder and cinnamon and sift into bowl. Combine the pumpkin, applesauce, brown sugar, white sugar, chocolate yogurt, egg whites, and egg. Fold in chocolate chips. Slowly add the dry ingredients into the wet ingredients. Pour mixture evenly into muffin pan(s). Bake in oven for 18-20 minutes. Allow muffins to completely cook before eating.
