How Do You Make Pumpkin Cake (Recipe)?
This recipe was handed down to me from my grandmother and her mother before her and so on for four generations along with hundreds of others in handwritten books of recipes collected over the years. Preheat oven to 350 degrees. Mix dry ingredients in a bowl with a wooden spoon or wisk. Mix wet ingredients in a seperate bowl with a wooden spoon or wisk. Combine wet and dry ingredients and beat until smooth and no lumps appear in the batter. Set aside for 10 minutes on a warm surface. Grease a tube pan (bundt pan) and pour batter in it. Bake for 1 hour or until a toothpick inserted into the center comes out clean. Remove immediately from the pan and cool on a bakers rack. * No frosting is necessary but a glaze of confectioners sugar and lemon juice is nice. * This cake freezes well and can be cut into slices, frozen and served as individual pieces.
