How Do You Make Potato Leek Soup (Crock Or On Stove-Top)?
Potato soup is economical to make, creamy without added cream, and very soothing on a cold day. Now you can be welcomed home after work by a crock of comfort. Look under “tips” for stove-top directions. Wash and peel potatoes and carrots, then dice. I like to use my Pampered Chef Food Chopper. Cut dark green tops off leeks. Cut tough extreme bottom of leeks off. Discard. Cut leeks in half to make shorter lengths. Then slice lengthwise. Separate layers in a bowl of water and swish around to wash. Dirt gets inside all those layers and you want to be sure to remove it. Drain leeks and chop. Wash celery and slice lengthwise a couple of times then dice. Peel and chop the two onions. Place all diced vegetables in the crock. Add broth (or water) Add ham(or bacon), salt and pepper. Cook on low for 10-12 hours or about 4 hours on high.
