We are all looking for different Christmas Cookies and I am no exception. If you read my other recipes, you will have a good idea why I like to cook. These are very light even when cooked in lard. You try one, and you wish you had made more. Your kids will demolish them if you do not keep on eye on them. If you let them help you make them (Shaking them in the bag) you’ll wish you hadn’t. Add salt to eggs & hand whisk for 10 minutes Add sugar & flavoring & whisk until well blended Fold in flour Transfer to a well-floured board & knead until the dough blisters Cut dough in half Roll out one (1) of the halves with a rolling pin into a very thin layer & cut into strips about 4 inches long and 1 inch wide. Slit each piece in center (Slit parallel to the long edge) & pull one end through the slit (will look almost like a bow tie), and set aside on plate lined with wax paper Fry in hot fat (Lard*) until lightly browned.
