Pink pickled eggs and beets are good any time of the year! Place whole, peeled eggs in a glass jar or bowl. Mix the vinegar, beet liquid, sugar, salt, onion, and cloves. Add the beets to the eggs in the jar. Pour the vinegar mixture over the eggs and beets. Cover the jar or bowl and refrigerate for at least two to three days, preferably four or even five. Slice pickled eggs and beets. Serve on a bed of shredded lettuce or greens.
