How Do You Make Pikelets?
Pikelets are a small version of pancakes, although they taste a little like a cross between pancakes and a crumpet. They’re usually a hit with the kids and they’re perfect for camping trips. • In a large mixing bowl, mix together the flour, sugar, egg, and milk. Continue mixing until a smooth batter is formed. Add the melted butter and stir in. • Heat a heavy-based frying pan. Add a dob of butter to the pan and tip it across the pan to cover the base. • Drop one tablespoon of batter into the pan. Cook the pikelet one side, until bubbles appear on the surface. Flip over gently and cook the other side until browned.
