How Do You Make Pickled Eggs,Easy?
This is an old recipe for pickled eggs that I usually make around the Easter holiday, but are good anytime of the year. My mother used to make these a lot when I was a child. They look rather pretty sliced on a plate of lettuce leaves. But making them around Halloween is a different twist too! Drain the juice from the beets in the 1 quart pan. Place beet slices and eggs in a 1 1/2qt. jar of big bowl. Set aside. Into the pan of beet juice add cider vinegar, sugar, salt, pepper, and allspice. Stir until well blended and sugar is dissolved over a high heat. Continue to stir and heat to boiling. Remove and pour hot juice mixture onto eggs and beet slices. Cover and chill. Leave at least 12 hours to allow flavors to season eggs well. These are really pretty sliced on a plate bedded with leaves of lettuce. For a different twist make them during the Halloween season!
