This is an old Southern recipe handed down from my husband’s family, with a few minor adaptations I have made over the years. Even though I had never eaten persimmon pudding until I married, I have become quite fond of it and get compliments and requests for this recipe. It can be prepared with the large, oriental persimmons from the store but is most authentically made using the old-fashioned fruits found growing wild in many parts of the country. Pre-heat oven to 300 degrees. Spray or grease a 13×9″ glass baking pan. In a large bowl, mix the pureed persimmon, sugar, butter and eggs. In a separate bowl, combine the flour, baking soda and baking powder. Add the dry ingredients to the persimmon mixture a little at a time, alternating them with the milk until all is used. Add the spices and stir until everything is evenly combined. Pour the mixture into the prepared dish and bake for about 45-50 minutes. the pudding is done when the edges start to loose their gloss.
