Here in the south, ice tea is a daily staple. Whether you prefer plain iced tea or sweet tea, making the perfect glass of tea is fairly simple. Place a 2 quart sauce pan on the stove and then add 1 quart of hot water to it. Turn on the heat and bring this water to a full boil. Take 6 to 8 tea bags and drop into the boiling water. Remove the sauce pan from the heat and allow the tea to steep for exactly 10 minutes. Set a timer to make sure that you remove the tea bags in exactly 10 minutes. If the tea sets longer than 10 minutes, the tea leaves will become bitter resulting in a horrible tasting tea. But, if it sets less than 10 minutes, the tea will not be strong enough and have a good flavor. When the timer goes off indicating that the tea has steeped for 10 minutes, remove the tea bags and throw them away. Now get the pitcher and put the 1 quart of cold water into it.
