Simple yet effective, good roast potatoes will make a meal and impress anyone. I use home-grown organic potatoes from my garden in the mountains but this method ensures any potato taste good roasted. Preheat the oven to 450°F/230°C/Gas Mark 8. Peel the potatoes, cut in half and half again, put them in a saucepan and cover with cold water. Add ½ tsp salt, cover and bring to the boil. Simmer for 10 minutes. Select an oven tray that is just big enough so the potatoes will not be touching. Pour a circle of oil in the middle and tip the oven tray about in different directions to coat the base with the oil. Place the tray on the highest oven shelf to heat. Strain the potatoes and return them to the pan. Put the lid on and give them a couple of vigorous shakes to roughen the edges. Remove the hot tray from the oven and tip the potatoes in. Be careful not to splash hot oil and carefully turn them over with a spoon to cover all sides with the oil. If you run out of oil, add a bit more but don’t
