We call ’em hard boiled but they’re actually hard COOKED eggs. Boiling eggs makes the yolks get dark around the outside. Eggs make a great protein boost to salads and other none meat meals, as well as being how deviled eggs get started. A couple of eggs a week don’t hurt your cholesterol levels. Put eggs into an empty saucepan. Cover with hot tap water. Set on medium high heat and bring to a boil. Lower heat and allow to simmer for 10 minutes. Meanwhile, prepare an ice water bath in a bowl with plenty of ice, allowing plenty of room for the eggs. After they’ve simmered for 10 minutes, turn off the heat and spoon the eggs one at a time from the hot water to the ice water bath with a slotted spoon. The sudden extreme change in temperature will make the shell separate from the cooked egg quite easily.
