Pecan Tassies are a family favorite of ours. I like to make these and add them to my Christmas cookie tray. Enjoy! DOUGH: 6 ounces cream cheese, softened 2 sticks butter, softened 2 cups all-purpose flour. In a mixing bowl combine cream cheese, butter and flour to make a soft dough. Grease mini muffing tins with solid shortening. Press dough on bottom and up sides of greased tins. Set aside. FILLING INGREDIENTS: 2 large eggs, beaten 1 1/4 cup brown sugar 1 teaspoon vanilla 2 Tablespoons butter, melted Mix filling ingredients well. Fill prepared shells about 1/2 way up. Do not over fill! Sprinkle with chopped pecans. Bake at 350 degrees for 13-15 minutes. Cool in pans 2 minutes before removing to wire rack to cool completely.
