This is a great cookie to make for Christmas, and while sounding very fancy, is nothing more than adding chopped candied ginger to a spice cookie with pecans. Mix all the dry ingredients together and set aside. In a mixing bowl, cream the shortening until very smooth and light. Add in the brown sugar. Mix in the corn syrup and scrape the bottom of the mixing bowl. Add in half the milk, and scrape the bottom again. Stir in the nuts and candied ginger. Add in half the dry ingredients, then remaining amount of milk. Scrape the bottom of the mixing bowl well. Add in the rest of the flour mixture. Divide the dough in half and transfer to flour-dusted counter. Roll each half into a log about 2 inches or so in diameter and roll in parchment paper or foil. Place in the refrigerator until chilled. When ready to bake, heat oven to 375 degrees. Remove the logs from the oven and slice into rounds. Place onto ungreased cookie sheets and bake until browned, about 10 to 12 minutes.
