How Do You Make Peach Granita?
This peach granita is a little different from most granita recipes because it uses a firmer-fleshed fruit. Still, it makes an enticing summer ice, especially if you have very ripe, soft peaches on hand. This recipe makes about 3 c. Place the sugar and water in a small saucepan and heat until the sugar has completely dissolved. Let cool slightly. Place the peach flesh, syrup, lemon juice and vanilla in a blender and puree the mixture finely. Place the mixture in a shallow container and freeze for 3 to 4 hours. As the mixture freezes, stir it every 20 minutes or so, so it takes on a granular, flaky texture. Serve the granita while it’s still slushy.
