How Do You Make Pasta Allarrabbiata?
Pasta all’Arrabbiata is an other famous Roman recipe. Arrabbiata in Italian means “angry”. Traditionally this recipe wants the pasta sauce spicy and very hot with “peperoncino”, a small hot chili pepper, and garlic. Easy recipe for a hearty and delicious pasta! Ideally, fresh ripe Roma tomatoes should be used for this recipe, but a good quality of canned tomatoes will do. Either way, cut the tomatoes in big dices and set aside. In a pan, sauté the garlic, sliced, and the peperoncini, or chili peppers in 2-3 tablespoons of olive oil, for about half a minute. Add the tomatoes, 3-4 basil leaves broken by hand, and stir. Let cook for about 10 minutes over medium-low fire. At this point, using a fork, mash the tomatoes and stir the sauce to reduce the chunks and create a better texture. Add some more basil and turn the fire off. Cook the pasta “al dente” in abundant salted water. Drain and transfer to a serving bowl, add the sauce and mix, topping with grated Romano cheese.
