Preheat oven to 400 degrees. Lightly grease a 9-by-13 baking pan. Scrub potatoes, and remove any eyes or bruised spots, but don’t peel. Coarsely chop potatoes into chunks. Place potatoes in dish and sprinkle with oregano, chives and parsley. Drizzle olive oil over the potatoes and use a rubber spatula or wooden spoon to mix well, making sure all of the potato pieces are covered. Bake uncovered, at 400 degrees for 40 to 50 minutes or until the potatoes are lightly browned and crispy.
