How Do You Make Orange Applesauce Muffins (Diabetic)?
My niece is diabetic and we are always looking for great diabetic recipes. This is one of our absolute favorites. We love making this recipe as a side for breakfast or as an after school snack for the kids. This muffin recipe is an excellent sugar free and low carb dessert option. It’s healthy and delicious! ENJOY! Before baking, always start out with a clean and dry surface. Preheat oven to 450. In a large mixing bowl, combine flour, baking powder, salt, cinnamon and baking soda. Make an indentation in the center of the dry ingredients. In a small mixing bowl, combine eggs, applesauce, orange juice, orange peal and cooking oil. Pour mixture into indentation of flour mixture and stir until barely moistened. Lightly grease muffin tins (can also use muffin cups). Pour batter into tins and fill 3/4 full. In preheated oven, bake muffins for 15-20 minutes or until golden in color. Remove from pans and serve warm. One muffin equals: starch/bread exchange, fat exchange.
