This is a great recipe for Irish Soda Bread handed down from my Grandmother who came straight from Ireland. Too good to be reserved only for St. Patrick’s Day, she baked it for us every time we went to visit. Better breakfast treat served with butter than any bagel or muffin could be and easy enough to make all year round. Preheat oven to 325 degrees. Grease and lightly flour a 13 x 9 x 2 inch pan. (A cast iron skillet is highly recommended if you have available.) Mix flour, sugar, raisins, baking powder and salt in bowl. Beat the eggs, melt the butter and combine together with the milk in separate bowl. Mix wet ingredients above with dry ingredients and mix until moist. (Be sure not to over stir however). Put mixture in pan and cook at 325 degrees for 50 to 55 minutes. Let cool before slicing. Spread butter on it for extra deliciousness.
