How Do You Make Opals White Fluffy Frosting?
White, fluffy and sweet, this frosting goes well on cakes that other frostings don’t, like spice, orange, etc. This is one of the few cooked frostings I make, but it’s worth the little extra effort. Combine the egg whites, vanilla and cream of tartar in a small mixing bowl and start beating on medium speed to desired consistency. While the egg whites are beating, combine the sugar, corn syrup and water in a small sauce pan. Boil until the mixture spins a thread.* As the mixture gets closer to getting done, you may want to increase the speed on the mixer so the egg whites get nice and fluffy. *Lift the spoon out of the liquid and let it drain off. When it has cooked long enough, the end of it will drift away looking like a thread from a spider’s web. Continue to beat the egg white mixture on high speed while you slowly pour the boiled mixture into it. Spread over the top of a cooled cake.
