How Do You Make Onion Rings Like Hackneys Restaurant?
When I moved to Florida from Chicago, I left behind a host of favorite restaurants and dishes. One of them was the onion rings served at Hackney’s restaurant. Having to survive without them, I resorted to developing my own quick recipe. Hope you like it. Hackney’s restaurants in the Chicagoland area are famous for their unusual onion rings. The rings arrive compacted in a loaf after being deep fried in a square wire container. The rings have to be pulled apart to be eaten, and believe me they are worth it. Lacking a deep fryer capable of following that regimen, I experimented with what I had on hand and came up with the following recipe. I assure you it is a good “knock-off” of the real thing. Mix together 1 cup of flour, 1 tablespoon baking powder, and salt and pepper to taste. Set aside. In a deep bowel, mix together one egg with 1/2 cup milk. Add salt as desired. Cut onion into thin wedges and separate rings. Soak them in the milk/egg/salt mixture for 10 minutes, then dredge through
