Trying to adjust the ratio of water, egg, milk/water, etc. to make just one or two pancakes is a bit unrealistic so there are several things that you can do: One is to make the recipe just as it is and only cook up as many pancakes as you want then store the rest of the batter in the fridge for later; the other is to again make the batter as it is, cook up all the pancakes and then wrap up the leftovers in plastic wrap and foil and store in the freezer. Then the next time you want a pancake, or two, just take out what you want from the package and either reheat in the microwave, the toaster/toaster oven or the regular oven.
