How Do You Make Old Fashion Potato Candy?
The word POTATO just does not seem as though it should be used in the same sentence as CANDY. The potato is the base to create the dough like substance to make the candy. This is an old-time family Christmas tradition and we hope to make it yours. When I was young boy I was caught running to my room with a plate of potato candy and cracked my head on the corner of the wall and needed stitches!!Yes that is how good it is! Now let’s get started and make up a batch. No running with the plate! Have all ingredients ready and make sure to spread out the wax paper first. Peel the small potato and boil in a sauce pan of water until it is as soft as you would use for a mashed potato. Remove the potato from the water and place it into the mixing bowl. Mix in confectionary sugar and food coloring if desired until it looks like a ball of dough. Spread the dough on the wax paper and roll out as thin as possible.
