It goes with just about any main course and is so easy to make that we have it often… In a skillet, melt 4 tbsp butter – sauté celery and onion until slightly clear in appearance. Set aside While you are doing this – fill half a sauce pan with water and bring it to a boil. Then add the Broccoli and cook until done. Drain and put into a large mixing bowl. To the Broccoli add in the Celery and Onion mixture along with the Rice, Soup, Milk, and Velvetta. Add 1 tbsp sugar and stir to mix. Pour all this into a buttered casserole dish and bake at 300 degrees for 1 hour and 15 minutes or until top is bubbly and cheese is melted.
