This sauce is almost a staple in Vietnamese cooking. It is used often as we would use salt and pepper on our food. I absolutely love this sauce and it is wonderful on rice and grilled pork. I also use it for dipping spring rolls and egg rolls. Peal and shred the carrot. sprinkle the carrot with 1 teaspoon of sugar and set aside and let stand for about 15 minutes. Combine the garlic, chili garlic sauce and sugar in a mortar. Pound with pestle until a fine paste. (If you do not have a mortar and pestle this step can be skipped, it’ll still make a great sauce) Add the lime or lemon juice, vinegar, fish sauce and 1/4 cup water to blend. Add the shredded carrots to the mixture. It’s ready to serve.
