This red cabbage is a delicious European treat with a delectable sweet and sour flavor! It goes especially well with Kjottkaker (Norwegian meatballs) or with Thanksgiving turkey or Christmas pork roast! This is my late mother-in-law Asta’s recipe, and is a favorite of our family. It’s really easy to make and a great side dish. First, cut cabbage head into 4 quarters and remove the inner core. Slice the first quarter into thin slices, and put in the bottom of a medium saucepan. Peel and core the apple, and cut it into quarters. Cut the first quarter into small pieces, and layer over the cabbage in the pan. Add a layer of salt over the cabbage and apples. Continue in this same manner, layering a quarter of the cabbage thinly slice, a quarter of the apple in small pieces, and some salt until all is in the pan. Mix sugar with vinegar in a small bowl, and pour it over the layers. Add 3/4 – 1 c. water. Cover and simmer on med-low heat for 2 – 3 hours. It will be tender and will have absorbed
