If you are like me, then you love the down home taste of southern candy like rich creamy pralines! Sometimes though you don’t want to wait until the holidays to find these rich little delights so why not make your own. Place your pot on the stove and turn the heat to medium and toss in brown and white sugar, half and half and pecans. Stir and allow to come to a gentle boil. Check the temperature of the mixture by sticking your candy thermometer into the mixture but not allowing the thermometer to touch the bottom of the pan. You should allow the temperature to come to approx. 234 degrees F. This is called soft-ball stage. Once it reaches 234 f. Stir and place butter into mixture allowing to melt. Allow to cool for no more than 2 minutes. On baking sheet or large platter, place a sheet of wax paper. Take a spoon and dip into the mixture spooning it out into little circles or ovals onto the wax paper. Allow to cool and then gently peel the wax paper from the pralines. Enjoy!
