Here is a recipe to make healthy, low calorie New England Chicken Croquettes that are so delicious! Brown 1-1/2 pounds of chicken, cut into bite size pieces, in a small amount of olive oil. In a medium saucepan melt 2 Tbsp margarine over low heat; stir in 2 Tbsp flour until smooth. Add 1 cup fat-free milk gradually, whisking until smooth. Add 1 tsp Worcestershire sauce, 1/2 tsp chervil, 1/2 tsp salt, 1/8 tsp pepper. Mix well. Finely chop chicken and add to milk mixture. Allow mixture to cool. When cold, form into 8 balls, using 1/3 cup mixture per ball. Roll in 2/3 cup bread crumbs then in 2 eggs that have been lightly beaten and again the bread crumbs. Place on a Baking Stone with sides and bake for 25-30 minutes at 375 degrees. Serve over one serving of brown rice with a little soy sauce on it.
