There are so many different ways to make muffins. You can make them from scratch or purchase a mix. Stores sell muffin mixes that only ask you to add water and oil. You don’t, however, need to purchase these store mixes if you have a box of pancake mix on hand. The pancake mix is an excellent base to begin creating your own muffin mix. These muffins are great for breakfast, a snack or as a dessert. Crack your eggs in to a bowl and make sure you remove any shells. It is best to do this first, otherwise you will have trouble seeing the shells among the other ingredients. Add your milk, sugar and vegetable oil to the bowl. Stir to combine all of these ingredients. Add the pancake mix and stir to combine. The mix will be a little thick, but it will be moist. Try to make sure that you don’t have too many lumps.
