This soup is definitely more of a complete meal than most. It has a lot of ingredients but don’t be put off – its completely worth making. The Moroccan quality of the soup comes from the mix of spice (curry powder) and sweet (raisins and honey). This is one of my all time favorite recipes! It serves 6 easily and preparation and cooking time total around an hour. In a large saucepan heat both the oils with 1/4 tsp salt. Brown the chicken pieces lightly on both sides. Remove the chicken to a separate plate. In the same saucepan cook the onion until soft without coloring. Add the leeks, carrots, celery, and garlic and cook for 2 minutes. Stir in the honey, raisins, curry powder, cumin, and allspice and stir over the heat for 1 minute. Return the chicken to the pan. Add the rice, lemon slices, and raisins. Pour the stock over all mixture, stir well, and bring to a boil. Cover the saucepan, lower the heat, and simmer gently until the chicken is cooked – 20 to 25 minutes – stirring occasiona
