About 12 years ago, a friend told me about this chicken, but I had forgotten about it until recently. I forgot how good this is. Heat about 3 or 4 inches of cooking oil in a wok or some similar pan, electric deep fryer, or electric skillet. Rinse chicken and pat dry. Cook chicken pieces in hot oil until brown and cooked through. Combine 1 cup soy sauce, 1 cup sugar, 2 cloves finely minced garlic, 2 thinly sliced green onions with tops, 1 finely chopped jalapeno pepper with seeds & membranes removed. Use a medium sized narrow bowl and mix well. As soon as chicken is removed from the hot oil, put it directly into the bowl of sauce, and stir it around to keep sugar from settling on the bottom of the bowl. Lay chicken pieces in a single layer on a rack in a flat baking pan, and keep hot in a slow oven until all chicken is cooked.
