How Do You Make Mock Peach Preserves From Figs?
While regular fig preserves are wonderful, it is fun to make Mock Peach Preserves and see if anyone can guess your “secret flavor ingredient”. Rinse figs in colander and drain – do not soak. Place figs in pot and finger crush until “mushy goo” consistency. [See tips] Add sugar and Pineapple Jello [the flavor combines with fig to mimic a peach taste] to pot then heat on low, while stirring, until Jello is dissolved. Turn up heat to medium-high, stirring often, until fig mixture begins a low-bubbling boil. Continue stirring often and let mixture boil for 20 minutes. Add Ready Jell and boil for one more minute then immediately remove from heat. Fill canning jars and seal with lids.
