How Do You Make Microwave Lemon Pepper Chicken Breasts?
My family loves lemon pepper chicken, but it takes forever to make, so I have adapted this recipe for the microwave. With a cooking time of less than 10 minutes, you won’t have to order out and you can still make it to basketball practice on time. Pour the water into a microwave-safe casserole dish, and place in the microwave. Heat until your water starts boiling, this takes about 2 minutes. Stir in bouillon cube, butter, lemon pepper seasoning, and salt. Pierce the chicken breasts with a fork several times on one side, place your chicken breasts pierced side down in the casserole dish. The chicken should be almost covered by the liquid, if not completely covered. Cover the dish, and cook in the microwave for 10 minutes, or until chicken is no longer pink, and juices run clear. If the chicken is not done after the 10 minutes, continue to cook at 1 1/2 minute intervals. Enjoy!
