How Do You Make Microwave Creamed Rice Pudding?
I love hot creamed rice and cold rice pudding, but when the craving hits me, I don’t want to spend hours making it…I want it now! Most recipes call for baking, or cooking with a double boiler. This simple recipe calls for nothing more than the ingredients, a bowl and a microwave! Easy & oh so yummy! Combine the rice, water & salt in a microwave safe bowl. Use a large enough bowl to accomodate the rest of the ingredients later. Cover and microwave on high for 5 to 6 minutes. Make sure your covering is vented so that the heat & steam have a means to escape. Make sure rice is tender. Stir in butter, sugar & milk. Microwave on high for another 8 to 10 minutes. I used Splenda instead of sugar, use your preference and sweeten to your taste. I also used 2% milk instead of whole milk, either will work just fine. Beat the eggs in a separate container.
