Although many types of packet spice mixes and jarred sauces are available to help create taco meat, making your own is just as easy and all the more authentic. All you need are spices, a stove and some ground beef. Brown 2 lbs. lean ground beef, such as chuck, in a skillet over medium heat. Use a wooden spoon or spatula to turn and break into pieces. Cook until brown, no more than 10 minutes. Tilt the pan on the edge of the stove or hold the handle and incline enough to allow the oil to puddle at one end of the pan. Pour or scoop off the oil. It is not necessary to do this, but it will not detract from the flavor and will make your tacos healthier. In a small bowl, mix together 1 tbsp. each of ground cumin and chili powder, ΒΌ tsp. each of salt, black pepper and cayen
