How Do You Make Mexican Lasagne (Gluten-Free)?
Here is a great option for those tired of the same old lasagne. I call this a lasagne because that is how it’s put together, but I also sometimes call it an Enchilada Casserole. It has a bit of spice, which is great for a cold weather meal, and the leftovers are very tasty, too! Brown Turkey in EVOO until mostly cooked (no pink), drain and leave in strainer. I have also been known to make this dish with chicken breasts, cubed and sauteed for 5-6 minutes. Remove chicken from skillet and save as you would the turkey. In same skillet, sautee onions, pepper and garlic for 5-7 minutes. Add tomatoes, beans and seasonings bring to a nice simmer. Add meat back to sauce and cook for 3-5 minutes. Spray an oval casserole dish with Pam Olive Oil Spray and line with 4 of the corn tortillas, or however many you need to cover the bottome of the casserole.
