How Do You Make Mexican Christmas Eve Fruit Salad (Ensalada Nochebuena)?
This fruit salad is a Mexican tradition that is eaten on Christmas Eve. While it is traditionally served on Christmas Eve this salad can be eaten anytime. If you are thinking “I dont like beets” dont worry, I didnt like them until I tried this recipe. Wash and peel the beets and cook with the sugar in 6 cups of water. When the beets are tender drain and reserve the cooking water and allow to cool (will be a deep red color). Peel and dice the jicama into bite size cubes. Peel and segment the oranges, removing the membrane from each segment. Cut into bite size pieces. Peel, core and dice the apples into bite size pieces. Dice the beets into bite size pieces. Place the diced fruit and beets into a mixing bowl and add 2 cups of the cooking water from the beets (or enough to immerse all of the fruit in the liquid) Serve in cups with the fruit and juice. Add peanuts (if desired) to each cup for a crunch.
