In a blender combine the sour cream, buttermilk, garlic, cilantro and 1/4 cup Cotija cheese. Blend until smooth and cilantro is completely incorporated. The mix should be a light green color. (You should be able to find Cotija cheese in your supermarket, along with other specialty cheeses. It is a Mexican white cheese similar to Feta cheese.) Empty contents into a bowl and season with salt to taste. Refrigerate for two hours before using. Prepare individual salads on small plates with torn or chopped Romaine lettuce and diced tomatoes. Spoon a small amount of dressing over the top and toss lightly to combine. Garnish with additional crumbled Cotija cheese, roasted sunflower seeds and toasted tortilla strips.
