How Do You Make Mediterranian Eggplant Lasagna?
Lasagna is a delicious and filling meal that the whole family can enjoy. Eggplant Parmesan is another dish that is perfect for all ages. This recipe takes the two ideas and throws them together into one recipe, while adding a Mediterranean twist. Preheat your oven to 350 degrees. Spray baking sheet and baking dish with cooking spray. Peel the skin off eggplant and discard skin. Cut off the top of the eggplants, and then cut in half lengthwise. Lay each half of the eggplant flat side down on your cutting surface, and cut into thin 1/4-inch strips. Place each strip onto baking sheet, making sure not to overlap. Spray eggplant with cooking spray. Place in oven uncovered for 10 minutes. (Note: If you have a small oven, you may need to do this in two batches) Take eggplant out of oven. Raise oven temperature to 425 degrees. Empty container of ricotta cheese into mixing bowl. Sprinkle basil, oregano, feta cheese and half of mozzarella cheese on top. Drop spinach into mixture.
