How Do You Make Mediterranean Potato Salad?
This is a very refreshing meal in a dish that I learned from my ex-Mother in Law in Italy. This dish adds elements of Italian and Greek cooking and is very healthy. You will love it in the Summer because it is eaten cold and is very refreshing. Step 1 Peel potatoes and chop into 2 inch pieces. place in saucepan and cover with water. Salt the water with about 1 Tsp of salt. Bring to a boil and cook until potatoes can be pierced easily with a fork. Step 2 While potatoes are cooking, dice onion, chop tomatoes in half and remove pits from olives (if desired). Step 3 Once potatoes are ready place in a large bowl and add onions, tomatoes, tuna (remove oil first), olives and a pinch of salt. Mix well and refrigerate for about half an hour. Step 4 Once Salad has cooled, drizzle olive oil and serve. Add salt to taste.
