This would go great as a side dish with falafel and pita or your other favorite Middle-Eastern or Mediterranean dishes Cook orzo according to package directions. Orzo is a very tiny pasta. Don’t forget that it expands when it cooks. Two cups of uncooked orzo will make much more when cooked. Notice that this recipe calls for two cups of COOKED orzo. Drain and add a touch of olive oil to keep the orzo from sticking. The orzo takes 7-8 minutes to cook in boiling water. Allow the orzo to cool before adding other ingredients. Peel, seed and cube the avocado. Seed and chop the tomato. Peel and chop the onion. Add add the vegetables to the cooled orzo. Toss to mix.
